Pan-Cooked Scallops

Here’s a quick and easy recipe for cooking scallops. I got my scallops at Whole Foods and as an added bonus, they were filming Emeril’s new show, Emeril Green while I was there. I’m not sure if I got on camera, but when I turned to leave the checkout lane, the camera was right there! Using good quality seafood definitely makes a difference!

  • 1/2 lb scallops
  • 2 TB butter
  • 1 handful parsley, chopped
  • 1 clove garlic, chopped
  • 1/4 c white wine
  • 1/2 lemon

Chop the garlic and parsley and slice your lemon. Rinse off your scallops, season with salt and pepper, and lightly coat them with flour. Heat a skillet and add 1 TB of the butter. When the butter is melted, add your scallops. Cook for 1-2 minutes, flip, and cook the other side for 1-2 minutes. Add your parsley, garlic, and the other 1 TB of butter. Cook for another 1-2 minutes until the parsley has cooked down. Add the wine and cook for 1 more minutes, scraping the bottom of the pan to get all the brown bits unstuck. Makes 1 giganto serving or 2 normal size servings.

Review of Martha Stewart Everyday Kitchen Island

I don’t expect much from K-Mart. Past experience has shown me that buying large items with small pieces from K-Mart is usually a bad idea. There’s always something missing or damaged. But I really liked Martha’s kitchen island so I decided to give it a whirl. After not one, but two different men helped me and my friend get this giant heavy box first into our cart and then repositioning it so we’d fit in the checkout lane, the cashier refused to ring me up because he said it wasn’t going to fit in his aisle (never mind that I was already in the aisle!). So I had to ask all these people to back up out of the checkout lane so I could get out and go to the customer service desk. Oye! We got it into my Jeep Liberty and once home, unloaded it by opening the boxes and carrying in the individual pieces since it was too heavy for me and my friend to lift the box.

I was super nervous but it went together really easily! For once someone understands how to pack the screws, doodads, and thingys. They were in a shrinkwrap sort of package - clearly labeled and secure. The numbers on the doodad package matched the instruction sheet which also included a picture of the doodad. Redundandy is a good thing! We got it together in about an hour. The matching stool actually seemed harder to put together but maybe that’s because I used all my brain power on the island.

I give Martha a B+ for packaging and ease of assembly and an A for making such a nice looking island so cheap. But I give her a D for marketing for putting such a great product in such a crappy store. I guess that’s how she can sell it so cheap!
